I am going to share with you my most popular Christmas cookie, and to top it off its a no bake . I make these Rum Balls every year after Thanksgiving to give them time to age by Christmas. They get BETTER with age YUM.
Rum Balls
2 cups finely crushed vanilla wafers ( I use food processor)
1 cup granulated sugar
1/2 cup finely chopped walnuts ( I use food processor)
1/3 cup melted butter or margarine
1/4 cup light rum ( I use spiced or whatever I have in the house)
powdered sugar
Line airtight container with wax paper. Set aside. In large mixing bowl, combine wafers, granulated sugar, and walnuts. Add butter and rum. Stir until well blended. Mixture will be crumbly.
I use my 11 cup food processor to do all the crushing and mixing up of the ingredients. It just takes minutes and everyone thinks you spent all day making them.
Shape mixture into 1 inch balls and roll in powdered sugar. Let stand at room temperature for 1 hour then reroll in powdered sugar and place in prepared container. Store in refrigerator.
One tip is to use the cheapest vanilla wafers you can find, I use the Aldi brand, they are great for this recipe and good to eat out of the box too.
So there you have it the worlds best Rum Balls, nothin like your Mama would have made !!!
