Cape Cod Oatmeal Cookies - Ode to Dad

These were my Dad's favorite oatmeal cookie.  So this is for Dad.

Cape Cod Oatmeal Cookies
from the Fannie Farmer Cookbook

1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg lightly beaten
1 cup sugar
1/2 cup melted shortening
1/2 cup melted butter or margarine
1 tablespoon molasses
1/4 cup milk
1 3/4 cups uncooked oatmeal
1/2 cup raisins or dried cranberries
1/2 cup chopped nuts

Preheat the oven to 350 degrees. Mix the flour, baking soda, cinnamon, and the salt together in a large bowl.  Stir in the remaining ingredients. Arrange by teaspoonfuls on ungreased or parchment lined cookie sheets and bake until the edges are brown about 12 to 15 minutes.

These cookies took 14 minutes in my oven.  They are kinda different because they contain no brown sugar and stay soft and chewy.  My favorite kind of cookie.





So there you have it another great cookie to add to your Christmas baking list !! I hope you like them as much as my Dad did !!!
