Sugar Cookies

As I go through the month I bookmark and print recipes to try and here is one for Lofthouse Sugar Cookies from Mother Thyme  If you have not been to visit this blog YOU MUST.  She has some great recipes and pictures that will make you want to stop in your tracks and cook or bake something up.

This recipe calls for cake flour which I do not keep around the house so I used this substitution that I found on line. For every cup of all purpose flour remove 2 tablespoons and replace it with 2 tablespoons of cornstarch and sift, sift, sift and resift at least 5 times.

Make sure you plan well because this cookie dough must rest in the refrigerator for one hour or I think you could do it overnight. 

These cookies are big, soft and YUMMY !!!

I did not make the icing as I wanted to try them naked and with some sprinkles and colored sugar so that is what I did.  The next time I make them and there will be a next time I will make the icing.

  1. They look delicious! Lofthouse cookies are my kids' favorite store bought cookie. I'd love to be able to make them at home.
