I hope everyone had a great Christmas and New Year. I know I was absent from posting, but I like you was enjoying the holidays.
As we move into the new year I plan to make and bake and cook and hopefully continue to make this blog a place you enjoy and will continue to visit.
This weeks post is mostly about these lovely Onion Rolls. I went a searching and found a recipe on Allrecipes.com, Soft Onion Sandwich Rolls.
This recipe is a good base to work off of, as I was reading the comments several suggested to make sure you watched the dough in the machine as it needed more liquid to come together. This was true for me too I had to add an additional 5 tablespoons of warm water to get this to come together into a nice soft dough.
I also used bread flour not all purpose and added my usual 4 teaspoons of vital wheat gluten.
This dough was easy to shape into sandwich rolls.
Here are a couple shots of the finished rolls..
I have to admit we ate these rolls with our New Year's dinner of sausage and sauerkraut. They are soft and chewy and not too oniony.
They will make a great sandwich tomorrow.
I am going to move into the world of sourdough starter and sourdough bread. This has always intimidated me, but for the New Year I am giving it a shot. I will let everyone know of my progress.

ReplyDeleteFunny you should mention this! Just made my 1st batch of starter ever! I'm on day 2. I also made onion/rye bread for the 1st time and it came out beautiful!I was so proud of it. And it tasted great. I used breadmachine recipe. It was hard to choose a recipe but I picked a winner. The sourdough recipe I picked uses potato flakes and is an easy one to do.

ReplyDeleteDenise,I made thses rolls yesterday and they turned out great!!!!!I made a couple changes tho. I used sauteed onions instead of dried onions in the dough and added just a little onion powder. But I did use the dried onion on top. They looked like a pro in appearance for the finished product.I will make these again as they are a keeper! Thanks for sharing.
