I am back to baking !!! Test stress over for a least a week or two. I needed to feed my sourdough starter, so I decided to make some english muffins.
I have made muffins before using the bread machine to mix everything up, but this recipe you have to start the night before. So I used the good old method of mixing it up and AACK kneading it by hand.
I think I could have used my kitchen aid mixer with the dough hook and I think I will next time.
The recipe I used was from Taste of Home, Sourdough English Muffins, please click on the link for the recipe. I chose this one because it used less flour and made enough for the hubby and I to enjoy. All the other recipes made two dozen or so muffins depending on the size you cut them out.
All I can say is the muffins are tangy with sourdough flavor and full of nooks and crannies to fill up with butter and homemade jam !!! I got eight good sized muffins from this recipe.
This is the sponge I made the night before with the starter flour and water, before add the rest of the ingredients the next morning.
The next few are of the finishing touches cut out and risen for an hour ...
And lastly the muffins cooking in the skillet !! My tip is to put the lid on while they cook up, then you are assured that they are done in the middle. Oh and preheat your griddle or electric skillet at least 5 minutes before you start ..
We enjoyed these alot and I will be making them again.
I hope everyone will give these a try if you happen to have some sourdough starter that needs to be used or fed !!!
