Whole Wheat Buttermilk Pancakes

A couple of weeks or more have gone by, hmm old computer died, still getting used to all the new stuff on new computer. I still need to load my photo software on the new computer to get my pictures to look better, but oh well, I'll get to it soon.
We are trying to cut back on white flour, so I am using white whole wheat flour and a little bit of all purpose to make pancakes and such a little lighter.  I tried a recipe with all whole wheat flour and it was way to heavy for me.
So I changed it up a bit to make it a little lighter.
Whole Wheat Buttermilk Pancakes
3/4 cup all purpose flour
3/4 cup whole wheat flour ( I used white whole wheat )
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups low fat buttermilk ( I used 1 3/4 cups)
1 tablespoon vegetable oil ( canola for me )
1 large egg
1 large egg white
Lightly spoon flours int day measuring cups level with knife.  Combine flours, sugar, baking powder, baking soda and salt in a large bowl. stirring with whisk. Combine buttermilk, oil,egg and egg white, add to flour mixture, stirring until just moist.
Heat a nonstick griddle to medium heat.  Spoon about 1/4 batter for each pancake.  Turn over when tops are covered with bubbles and edges look cooked.
Serve with your favorite toppings.
I actually used 2 egg whites and it turned out just fine.
I hope these fill everyone up !!
Take care and thanks for stopping by !!
